Low Carb Hoagie Rolls

Serves: 5

Ingredients:

1¼ cups almond flour (4 oz.) (I used Honeyville)

2 tbsp coconut flour (0.7 oz.) (I used Nutiva Organic Coconut Flour)

2 tsp baking powder

½ tsp salt

4 large eggs, at room temperature

1½ tbsp olive oil (1 oz.)*

Instructions:

Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside. In a medium bowl, combine the almond flour, coconut flour, baking powder and salt until well combined. Add the eggs and olive oil and mix until a smooth dough forms. Divide into 5 equal parts and form each part into a ball. Place on the prepared baking sheet 3" apart. With wet hands, flatten the balls into ovals about 4" wide and ¾" thick. Bake for 20 minutes or until lightly golden brown on top. Remove from the oven, let cool 2 minutes and then remove to a rack to finish cooling. These can be stored in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months. Reheat before eating as desired.
