Low Carb Enchilada Meatballs

If you can't get enough Mexican food, then you're going to love this recipe for low carb enchilada meatballs. The best part about this recipe is that it's a slow cooker meal, so all you have to do is dump the ingredients in the slow cooker and let it warm up the house. Ingredients:

1 lb ground beef

4 oz cheddar cheese, shredded

1/4 cup onion, chopped

2 tbsp cilantro, chopped

2 tsp garlic powder

1/2 tsp dried oregano (or 2 tsp fresh)

1/2 tsp dried parsley (or 2 tsp fresh)

1/2 tsp chili powder (optional)

1 1/2 cups canned diced tomatoes, drained of juice and chopped into smaller pieces*

3 oz canned sliced jalapenos, drained of juice and chopped into smaller pieces** (or 1 small jalapeno pepper)

Directions: In large bowl, combine all ingredients except tomatoes and jalapenos. Mix with hands until combined.

Instructions:

Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

In a large bowl, mix together beef, cheese, enchilada sauce, salt, garlic powder and cumin until just combined.

Using a small scoop or spoon, roll the meat into 1-inch meatballs (about 2 tablespoons per meatball). Place on the prepared baking sheet and bake for 10 minutes.

Remove from oven and set aside while you prepare the enchilada sauce.

Meanwhile, in a 4-quart pot over medium heat, add olive oil. When hot add onion and cook for 3-4 minutes until softened. Add garlic and jalapeño and cook for 30 seconds more.

Add broth, tomato paste and spices to the pot and stir to combine. Bring to a simmer then reduce heat to low and simmer for 10 minutes. Remove from heat and using an immersion blender (or carefully transfer to a blender or food processor) blend until smooth. Return back to pot over low heat if needed.

Once meatballs are ready, add them to the enchilada sauce along with the cilantro and stir to coat the meatballs in sauce. Serve immediately with desired toppings.
