1 tsp vanilla extract

2 tbsp powdered erythritol

3 tbsp coconut flour (or almond flour)

1/8 tsp salt (plus more to taste)

Making pizzelle is one of my favorite holiday traditions to do with my family. I can remember making them with all the cousins on my dad's side of the family, and then later on with my daughter. The most important part about making these cookies is having a pizzelle maker (or an electric waffle iron). I also like to use anise oil in these as it adds another layer of flavor that gives an authentic pizzelle taste. However, if you're not into anise flavor, then feel free to omit the anise oil and add vanilla extract instead. In a large bowl, whisk together almond flour, whey protein, baking powder and salt. In another bowl, whisk together oil, eggs, vanilla extract and sweetener. Gradually add dry ingredients to wet ingredients and mix until combined.

Heat pizzelle press according to manufacturer instructions. Fill each side with 1 tablespoon of batter and cook for 30-60 seconds or until golden brown. Remove pizzelle from press and let cool completely on a wire rack before storing in an airtight container at room temperature for up to 3 weeks.
