The History of Beignets
Beignets are one of the most iconic dishes in New Orleans. These pillowy fried pastries were first introduced to Louisiana by colonists who brought the recipe over from France in the 1600s. When you hear the word â€œbeignet,â€ it's easy to think of the famous CafÃ© du Monde beignets that are served hot and covered in powdered sugar, but this version is just one kind of beignet. There are actually many different types of beignets across Europe and Latin America that have been around for centuries in many different forms.
In this recipe, I'm sharing my personal take on French-style beignets, which are traditionally made with flour-based choux pastry dough similar to what you'd find in cream puffs or profiteroles. This version is adapted for a keto diet by replacing traditional wheat flour with low carb almond flour and coconut flour instead.
Keto Beignets Recipe
The main ingredients in these beignets are almond flour and coconut flour. Both of which are high in fiber, low in carbs, and have a higher fat content than typical flours. They both have a mild taste and go well with keto recipes that call for a sweeter flavor.
Almond Flour Benefits: Almond flour is made from ground almonds. It is low in carbs and high in fiber, protein, healthy fats, vitamin E, manganese, and magnesium. It's also gluten-free! It has a sweet taste that works well in many desserts and baked goods. If you purchase blanched almond flour then it has been stripped of the skin which gives it a lighter color for use in recipes where you want a lighter colored cake or breading on foods like chicken or fish fillets.
So here is our keto beignets recipe. This recipe can be made using either a food processor or a mixer. If you don't have either of those then use a blender and pulse it very few times until the dough has just combined. Don't over mix it or you will end up with sticky dough that is hard to work with.

1/4 cup coconut flour
1 tbsp butter, ghee or coconut oil
2 large eggs
pinch of salt
1 tsp baking powder
1 tbsp apple cider vinegar or lemon juice
Melt the butter and mix with the eggs and apple cider vinegar. Add the rest of the ingredients. Microwave on high for 2 minutes. Let cool slightly. Cut into squares, dust with Swerve Confectioners and serve.*
