Pancake Mix Keto Recipe

1 1/2 cup almond flour

1/2 cup unflavored whey protein powder

2 tsp baking powder

1/4 tsp salt

1/2 cup cream cheese, room temperature

3 large eggs, room temperature

1 tbsp lemon juice (optional)

Mix all ingredients together in a large bowl with an electric mixer. Let the batter sit for 3 minutes. Heat a frying pan over medium heat and spray with nonstick cooking spray. When the pan is hot, pour 1/4 cup of batter into the middle of the frying pan. Cook for about 2 minutes on each side or until golden brown. Repeat until all batter is used up. Serve with butter and sugar free syrup!
